A rainy Saturday afternoon... a sugar crazed, bored teen... a house empty of applesauce... a cupboard full of apple butter... and thus a recipe is born. These are yummy, chewy, cinnamon spiced cookies that are super simple to make and sure to be a new fall favorite in your house.
Preheat oven to 375°F
Beat together sugar and butter. Whip for 1 minute. Beat in apple butter and lemon rind.
Sift the flour, powder, soda, salt and cinnamon into the batter. Mix until blended. Stir in chopped pistachios.
Drop by teaspoon on a lightly greased or silicone baking mat covered cookie sheet about 2 inches apart.
Bake on center rack until golden brown, 8-10 minutes. Cool on a wire rack.
