Super Simple Summer Squash Gnocchi Recipe

I took with me on our epic Texas Road-Trip Vacation (and can’t remember which one it was, sorry…) I cooked this up this evening with what I could remember of the recipe and it turned out way yummy… I even got the kiddos to pair some squash with bacon and a gnocchi… Fab!Hubby though, is a lost cause.

Ingredients

  • 6 slices black pepper bacon sliced
  • 1/2 of large onion
  • 3 cloves of garlic
  • 4 medium sized summer squash
  • 6 servings of potato gnocchi – cooked according to package instructions
  • Optional – Parmesan cheese to sprinkle on top

Instructions

  1. Put water on to boil gnocchi – follow package instructions
  2. Slice bacon into 1/2 inch pieces and in a large skillet cook bacon on medium-high heat until it starts to get crispy on the edges
  3. While bacon is cooking, chop the onion and mince the garlic – cook until it starts to go transparent
  4. While the onion and garlic are cooking, chop the squash – throw it in and mix it all together – cook for about 10 minutes, until squash is tender
  5. Drain the gnocchi when it is done – throw it in the skillet with the veggies
  6. Toss and serve hot with a sprinkle of cheese
